The unique sparkling honey mead is carefully crafted by hand in a cozy corner of the New England Tablelands of NSW, nestled between Tenterfield and Glen Innes. When a Frenchman visits Celtic Country and decides to create mead, he produces a naturally finished, distinctively flavoured, and sparkling drink - somewhat akin to champagne. Each bottle of handmade, sparkling mead exudes the distinctive fragrance of a particular blossom from a tree on the property. No two batches are identical - the flavour is influenced by various blossoms, the season, and the soil type.
